Our experience was amazing here! Whether you’re vegan or not, you’re bound to have a delicious meal. We had the veggie Korean wing, Banh Mi Tacos, a Root Vegetable Reuben, and a Korean stir fry and they were all so tasty and looked wonderful. The atmosphere here was super nice and all of the staff were extremely friendly, kind, and genuine. Everyone should pay a visit here if given the chance!

We really enjoyed the creativity and attention to detail in the food here. We found the flavor combinations in each dish very tasty. We also appreciated that they had both vegan and non-vegan protein options so it was easy to please everyone, and in a health-consious setting!

My husband and I LOVE this place. Not all of the dishes are killer but the one's that are good are absolutely insanely good. It is hard to find a restaurant in Denver that is consistently good every time you go in, especially with vegan restaurants. But Vital Root is always good all of the time. It feels like you have the same person making your meal each time. The people who take your order are kind and welcoming. They are extremely helpful and accommodating. They always remember to ask about food allergies and will work with you if you don't know what to order so you can find the best thing. I also love that things are vegan upon request. It makes it really easy to go there with people who have all different types of dietary needs (or none at all) and everyone can find something that they will love. I have to recommend my personal fave which is the vegan chicken bacon ranch wrap. I am not vegan so I get it with chicken but I don't eat pork. They have done something miraculous to seaweed to get it to taste exactly like smoked bacon. I mean all of the flavor and none of the cholesterol. We also order the vegan nachos with tamari mushrooms. The mushrooms are absolutely fire. Then if that weren't enough of a meal you can go back to the counter and get delicious desserts that are healthy. They don't use regular cane sugar and find a way to incorporate crazy things like beets into a brownie! I always feel like I leave there totally satisfied and having eating a delicious and healthy meal. If you haven't given it a try please do, they won't disappoint.

Wife and I were staying nearby so we stopped in to grab dinner. The interior is causal in a good way and has a nice look. Order at the counter and food is brought your way. Counter staff was friendly and helpful. We tried the nachos with Chik-in, tacos, and a breakfast sandwich with a lemonade to drink. Food came quickly and server was friendly. Everything was very good ! Overall, it was a quick, pleasant experience. Would recommend to anyone looking for a quick bite to eat with vegan options.

The open air environment is relaxing and casual, the staff are friendly and helpful, the menu is broad and good for those with restrictions. The fried mushrooms with chili sauce are just about worth a trip to Denver! If I go back I will definitely get the mushrooms. The chicken wrap I got was okay but a bit dry overall. The Korean dish my friend got was delicious and the braised pork on the side was oh so good! Overall it was a nice restaurant experience but at almost $75 for two of us to eat lunch it is pricy! Sure we didn't have to get an appetizer or a seltzer water but even still it would have been a little pricey. Overall, I think I would go back, but maybe only order the mushrooms because they are "wow" good!
