Specialties: Shamrock Brewing Company is an award winning restaurant and brewery located in downtown Pueblo, Colorado. Equal parts restaurant, brewery and Irish pub make The Shamrock a truly unique Pueblo business. Specializing in Irish and American cuisine, Chef Gordo's kitchen cooks from scratch and serves lunch, dinner and Saturday/Sunday brunch. All the NCAA games and NFL Sunday Ticket available during football season. Brewer Dustin Wertz always has several specialty beers on tap to go along with Shamrock's Irish Porter, Irish Red, Steel City Gold and PAPA (Pueblo American Pale Ale). Established in 2005. The Shamrock building was originally constructed in 1908, the first notable tenant was Johnson Bros. Motor Co., one of the first Xcelsior dealerships west of the Mississippi. Around 1940 the Shamrock Café opened for business. The age of the mahogany bar is not certain however there is a picture of the café set in the bar top from the 1940's showing the bar. Over the sixty plus years of operation the Café evolved into the Irish Pub and eventually the Irish Brew Pub. The Pub was the meeting place in downtown Pueblo for many years and locals reminisce about past business deals, raucous St. Patrick's Days and old romances. In 2005 the property was purchased by Shawn Sanborn and a six month renovation/restoration began. The 98 year old wood floor in the dining room was refinished. The World War II era tile floor in the bar was cleaned, repaired and resealed. The most tedious task was restoring the bar top while preserving as many pictures as possible and some of the Pub's 60 year history.
