We went here on Saturday. For dinner. Staff fast and nice, especially Natalie. Food was excellent. Alittle salty but not overpowering. I ordered a beef and bean burrito and a chicken enchilada with green chili. Nice kick.The drinks Outstanding we ordered the patron Cadillac margarita. Will definitely recommend

My husband I went in for our "C" date. We're doing activities monthly based on a letter of the alphabet. We try to do unique things, and we had never been to Chile Colorado before, so it fit the bill. We arrived in the early afternoon and were the only customers there at such an odd time. When we came in the music was very loud, we asked if it could be turned down and it was immediately. The service was great, we got our meals very quickly, the food was wonderful. My husband got the Carne Adovada and loved it. I ordered two fried homestyle burritos, one chicken and one carne asada. Both were delicious, though the chicken got taken home because I was too full. It was a bit too spicy, but still delicious. All around I would recommend this restaurant to friends.

This was my first time dining at Chile Colorado and it was a great experience! From the bright exterior signage to the amazing colors and artwork on the walls inside, I knew that I was in for something special. The restaurant itself is very clean, which is always a good sign of how the food will be prepared. I've always gone by the "Base a restaurant's food on how clean the restrooms are" motto. The menu is expansive, with so many options to choose from. This is a family-owned operation, and all of the recipes are theirs. On the recommendation of my friend, I ordered the Carne Adovada Plate. I hadn't ever had this before. So much flavor! A little spice but not too much. The pork was so tender and delicious. I added an egg on top (also a recommendation by my friend) and it was the perfect combo. We also ordered the Chips Trio for an appetizer: Salsa, Guacamole, & Queso served with homestyle chips. Everything was delicious! Chef Daniel Moreno came out to make sure that we were satisfied with our meal. It's always great when the Chef makes contact with the customer base. All in all, this was a great dining experience. I wish I still lived in the Springs so that I could try everything on the menu. I'll just have to settle on trying different dishes each time I'm in town. The prices are reasonable and the atmosphere is warm and inviting. It's definitely a must-try if you're looking for an authentic dining experience.
