The fine cuisine of Tarascos is a Bermudez' family tradition handed down from generation to generation. Founder and Executive Chef of Tarascos Noe Bermudez learned his families' traditional recipes from his mother Maria Trinidad-Bermudez a locally esteemed chef in Tijuana, Mexico. Noe has grown up learning the art of cooking. He has been in the restaurant business for over 20 years as a chef and manager. He is incredibly passionate about his food as well as the tradition and history of the recipes. For Noe it is far more than a dish but a piece of his heritage, it is a part of who he is. Noe's passion behind Tarascos is to "Bring the taste of Michoacan cuisine to Colorado." His traditional recipes are over a century old straight from Michoacan Mexico. I've been meaning to try this place for more than a decade. Colleagues who live in the area always pointed to it as their favorite Mexican restaurant. It did not disappoint. Really enjoyed their cochinita tacos and the Huarache with chicken mole. Our vegan friends also found great options. There's no beer or cocktails but some great house made juices. I can understand how this place has stayed in business for 18 years!

So many vegan options! The guy working there (maybe he is the owner) is super friendly, accommodating, and kind. They don’t have vegan cheese, but you don’t miss it! The food is super fresh and so flavorful! Also, delicious juices. Possibly our favorite Mexican restaurant with vegan options in Denver.

Tarascos is absolutely delightful—some of the best food and drinks you’ll find anywhere. Their vegan and vegetarian options are deeply flavorful and truly authentic, a beautiful reminder that traditional Mexican cuisine wasn’t built on pork, beef, or chicken—that came later, with colonization. It’s powerful (and delicious) to experience dishes that honor pre-colonial roots and show just how rich the cuisine really is without relying so heavily on animal products.

The food, atmosphere, and service at this Michoacán-style Mexican restaurant were all top-notch. The authentic dishes were excellent, with the carnitas standing out as the best meat for tacos. The fresh-made Jamaica and lemonade added to the delightful dining experience. We finished with some chocolate filled churros. Highly recommend.
