We pride ourselves on our "farm to spoon" concept, providing some of the freshest caviar from our aquafarm in Florida, Sturgeon Aquafarms. Marky’s Caviar was the original location for Huso, our Michelin-plated, intimate, speakeasy dining room, tucked behind the curtains of our retail front. With Huso's move to Tribeca in early 2025, the uptown dining room has transitioned under the Marky's Caviar name and continues to serve an extended à la carte menu featuring classic, caviar-inspired dishes with a modern twist, along with our signature caviar service. Both this location and Huso are overseen by Corporate Executive Chef Buddha Lo, a two-time Top Chef winner. Marky’s Caviar is located on Madison Avenue at 81st Street, with the dining room situated behind the retail shop. Reservations are available via RESY - "Marky's Caviar" - and strongly recommended as we only have seating for 12 guests at a time. Established in 1983. Marky's Caviar is a vertically integrated 41-year-old specialty retail and caviar business based in Florida, that has opened its first brick-and-mortar Manhattan location - just blocks away from the Metropolitan Museum of Art. The New York City location of Marky's, located on 1067 Madison Avenue (at 81st Street), features a retail gourmet storefront as well as an adjoining caviar bar experience, Marky's Caviar. Offering the world's first-ever "farm-to-spoon" caviar concept, Marky's serves the freshest caviar within days of harvest delivered directly from its own U.S. aquafarm, signature caviar flights will highlight domestically-raised, but purebred, Beluga, Sterlet and Sevruga. Since 2019, Sturgeon Aquafarms is currently the only legal producer of purebred Beluga in the USA.
