I have been to Sap Sua many times, and never had anything but an amazing experience. The warmth of the staff and excellent service leaves a lasting impression. I can’t say I have ever had a dish I don’t love, and my only issue is deciding what not to get because I can’t have the whole menu. The food is so good every time I’ve been , and I love getting the mainstay signature dishes as well as trying new dishes that rotate through. The bar program is so impressive as well, with well crafted cocktails that go hand in hand with the food. I cannot say enough good things about this place!

Absolutely delicious and incredibly fresh! As an Asian American who grew up partially in Asia, I’ve often found that Denver lacks truly high-quality Asian cuisine. But Sap Sua is a standout—an upscale Vietnamese restaurant that goes far beyond the usual offerings. Here, you’ll find shrimp cake, crispy pig ear, and trout roe—bold and exciting ingredients that are more rarely seen in Denver. Initially, I wasn’t interested in the grilled pork shoulder since it sounded a bit basic, but my friend insisted on ordering it. I’m so glad I gave it a try because it turned out to be the highlight of our meal! Hands down one of the best grilled pork dishes I’ve ever had—juicy, succulent, perfectly cooked, and absolutely packed with flavor. However, the shrimp cake was a tad salty for my liking. Every dish tasted incredibly fresh and vibrant, with a generous use of vegetables and aromatic herbs that elevated each bite. The restaurant itself is beautifully designed—elegant & clean yet also warm & welcoming. I wish I lived closer so I could come all the time!

WOW. The everything was absolutely phenomenal. We got the sautéed kale, the egg and rice dish, the cabbage, and trout. It looked so good I couldn’t wait to take pictures and just had to get a bite first. That kale I will definitely be back for, absolutely delicious. The rice dish was divine, I can see why they are known for it. A must have. The cabbage was alright, I definitely see the appeal but the crispy sardine croutons were a bit much for me personally. The trout we had was also amazing! The tomato/pineapple slaw with the dressing on top of perfectly cooked trout really took it over the top. The fish was cooked perfect, soft, juicy meat and a wonderfully crispy skin. Lastly the desserts were the perfect way to end the meal. The boba mousse had a lovely smooth mousse with small jelly in it (almost like caviar) complimented by chewy boba and soft jelly at the bottom. The ice cream was some of my favorite I’ve had! The lime leaf was nice and fresh with the crispy cinnamon cookie crunches on top! 10/10 It was a little loud but the restaurant was packed and conversation was good, with soft music in the background. It ended up being about $150 for the 2 drinks, 4 savory dishes, and 2 desserts. The service was excellent, our server, Alli was exceptional. Very informative and had great suggestions with food, drinks, and dessert. The manager was very attentive too, getting curbs off our table (we absolutely destroyed the first few rounds of food) and folded napkins when we went to the bathroom so they didn’t end up on the floor. The host greeted us right away when we got in and congratulated us on our anniversary. The best service i have ever had in a restaurant. Absolutely a step beyond and above in absolutely everything.

When I looked up how to make reservations, I was very pleased that they opened up at noon exactly 30 days ahead (instead of midnight, which is common). I snagged a reservation at 2pm on the dot as we are on EST and not MST. We joined our kids (they live in Denver) for the most spectacular dinner. From the outside, the place does not look like a restaurant at all, but a business. The inside is simply designed but warm. The kitchen is in full view at the rear. The restrooms are huge with a lot of cool mirror-balls hung from the ceiling. Fun! Our server Jonny was fantastic! All of the staff were equally so. We thought it was very special that the staff were listed at the bottom of the menu. That is a classy touch. Jonny helped us plan our eating experience and was spot on with recommendations. For the four of us, we ordered 8 dishes and an extra egg dish for dessert. Here is what we had and our thoughts (for ease of explanation, I will explain them by ingredients and not their traditional Vietnamese names): Albacore Tuna Crudo – Flavors are great together if you get a bite with all the ingredients. However, there was not enough ingredients to get that perfect bite each time. Beef Carpaccio – fantastic! We all loved it. Shrimp Cake – although it sounds weird, this dish was recommended by Jonny and was wonderful! Charred Cabbage – OMG, just order this. Don’t be put off by the anchovy breadcrumbs; that just means salty umami bombs of flavor with crunch over perfectly charred cabbage. Fried Eggplant – one of the most unique eggplant preparations and flavors we have ever experienced. We loved it. Steamed Mussels – the broth was good, but the mussels were fishy and tough. We only ate one, and Jonny graciously took them off our check without us asking to do so. Fried Chicken Thigh – Yummy!!! Soft Scrambled Egg – This was the absolute favorite dish of the night. We ordered a second one for dessert instead of something sweet. Sap Sua is known for this dish, and we can see why. This place will now be a go-to when we visit the kids in Denver. And BTW, the cocktails were unique and delicious as well.

Upscale Vietnamese on Colfax. Came to celebrate a birthday. Reservations recommended. We had eggplant, the famous brown butter egg dish, grilled pork, crudo, and jelly dessert. The pork was our favorite of the bunch, as well as the crudo. The egg dish gets a lot of attention. I thought it was fine, but believe most of the flavor there is the brown butter. It did not live up to the hype for me. All the food was yummy, but there is nothing that truly blew me away. The service on the other hand did. Our server was amazing. So attentive, yet chill, and very good at reading her customers. She was probably the best server I have ever experienced. Very nice atmosphere and professional staff. This was stand out. Parking in the back as well as on the street. Not too bad.
